HARVESTING
Night-time mechanical harvesting.
VINIFICATION
Once destemmed, it is left to macerate cold at 9ºC for
24 hours before a static debourbage is carried out. The next step is cold fermentation and it is then transferred to new French oak barrels where it is fermented for 100 days. Finally the contents of all barrels are homogeni- zed and submitted to cold stabilisation.
AGEING PROCESS
3 months in 225 l French and American oak barrels.
WINE TASTING
Crystalline, straw-yellow in colour with hints of green and gold. Clean, intense aromas reminiscente of white flowers and fruits, toasty and spicy flavours of dried bal- samic herbs. Full flavoured and tasty aftertaste.
