Night-time mechanical harvesting.
Once destemmed, it is left to macerate cold at 9ºC for 24 hours before a static debourbage is carried out. The next step is cold fermentation and then finally another debourbage process and cold stabilisation.
Crystalline, pale straw-yellow with with green reflections, displaying aromas reminiscent of white and citrus fruits. Tasty, full flavoured passage through mouth.
